The course is tailor for beginners to advance learners to polish their skills, which suitable for those who has passion in baking and love sweets, as well as Japanese food culture.

Learning with master chefs and instructors is an wonderful experience in life, they teach the skills in a simple way and ensure students can easily replicate at home. It opens the door of orthodox learning for the most solid skills from the beginning.

Instructor Ivy from Baking Arts Academy and Ms Ho from Mamama Kitchen will assisting students simultaneously during classes

80% of the courses are implemented by students, including: theory, skills, modeling, key points of production, use of materials, etc.

Professional Japanese/ Cantonese translator will be with us for the entire classes, communication with teachers will be barrier-free.

Beside learning pastry making skills and receive the master chef’s secret recipes, Moreover, to learn how to appreciate desserts and pastries from different angles.

《私房烘焙專屬課》

既然是專屬課,我們因應參加者的學習目標和烘焙程度而制定內容。上課地點是川島主廚位於神奈川縣新百合丘的奮鬥工房,亦即是nichinichi及Pan “n” You 的所在地,既可精進地學習烘焙技術,同時體驗烘焙師的實在工作氛圍。

每一天的課程為六至七小時,在川島老師指導下,由搓揉麵糰開始至烤焗,全程以實作形式學習,每天學習兩款麵糰及不少於八款麵包的造型、烘焙原理、食材運用。

《川島主廚私房烘焙專屬課》,可以是一對一形式進行研修,學員亦可以相約三兩志同道合的朋友,以不超過四人的小班形式一起學習,分攤費用。

每次專屬課的天數及具體日子,由雙方協商,視乎參加學員行程及學習進展,由一天起至一星期密集精研皆可,同時,歡迎相約分階段持續學習。

《川島主廚私房烘焙專屬課》學費 :
每天以日元400,000円起
(費用包括 : 師資、講義教材、食材、專業翻譯人員、助教、廚師服一套、午餐)
註 : 此費用以天數計,不超過三位學員同價,第四位學員需酌情增加三至四萬日元的食材及雜支費用。

Nichinichi創辦人
川島善行老師的故事
川島老師本是舞台藝人,二十四歲那年毅然暫別舞台,找尋新路向。
一天,女朋友送來出爐麵包,小麥香氣帶給川島老師幸福感和愉快感,自此,經常逛麵包店,每天自研學習麵包技術,並先後在日本パン技術研究所及群馬調理マイスター専門学校學習,繼而加入麵包店工作,立志成為麵包職人,透過麥香傳達幸福感。
川島老師曾在日本著名麵包店“365日”工作,數年後,決定開創自己的品牌烘焙店nichinichi。他的鎮店之作是如耳朵一樣柔軟的日式牛奶生吐司,還有香濃的雞蛋布甸三文治,他選用走地雞蛋,高湯蒸煮而成。他喜歡在麵包中加入時令及原地食材,製作不同風味的麵包。
2020年12月,川島老師出版他的第一本著作。
